'The best pubs are chaotic!'
MA editor Ed Bedington took the trip to speak to Rogers as he makes the final preparations ahead of opening his "beast" of a new site at the heart of London's West End.
The pub, which has been under development for some time now, and was formerly a Jamie's Italian, follows on from Rogers' departure from the Guinea Grill. The new pub is spread across four floors and will offer a traditional pub experience downstairs, and a dining experience on the upper floors that will range from high end steaks to scotch eggs.
Rogers and Carroll have been working with ex-Heston executive chef Ashley Palmer-Watts to create the menu, although Rogers said the venue was likely to open in stages with the downstairs pub coming on stream first and the restaurant following over the coming weeks.
Rogers is also hoping to re-create his legendary Guinness offer from the Guinea Grill, and said he has hired the two best barman in London to deliver the best possible experience to customers.
He added that he was delighted to be restoring a pub back to the capital and despite the challenges ahead, remains confident of its success.
